25 species of Pithaya are known, but can be divided mainly into two groups: the red pithaya and the yellow pithaya.

Yellow Pithaya has a white pulp with small black seeds.

The red one can be both white and red in the inside and is less tasty than the yellow one.

In both varieties the pulp is translucent and dense with edible semen.
