The Provola di latte di Bufala smoked is a version of the Mozzarella typical of Campania.
Bufala's milk mozzarella is smoked by natural process:
The mozzarellas are tied to two to a stick, on the bottom they have straw and bay which are covered with wet bags so as to produce smoke and not fire.
The Bufala milk mozzarella so smoked is then inserted in tanks full of the government liquid derived from the spinning, which in addition to salting it also serves to clean them from any ash residue.
Ingredients: Bufala milk, cove and salt.
It is naturally consumed in raw alone or combined with all kinds of vegetables.
To cook it, instead, it is removed from the liquid and kept for a few hours in the fridge, so that it can separate from excess water, thus gaining the right consistency.
