Tasting in purity. Excellent as an ingredient of typical Campania dishes, but also as pizza filling. Predilige red wines of medium structure.
It is consumed immediately after smoking, but can be briefly seasoned.
It is well preserved if packed with plastic parchment paper.
The crust is absent.
The surface is composed of a thin, yellow-ocra skin, due to the effect of smoking. The dough is soft, elastic, white or ivory.
