Pecorino Toscano is produced exclusively with sheep's milk from pastures in the area of origin (Tuscany and some neighboring municipalities of Lazio and Umbria), as established by the Production Disciplinary.
The seasoned Tuscan Pecorino is rich in tradition and famous all over the world for its decided but soft taste and for the most intense and structured aroma.
The seasoned Tuscan Pecorino is made of semi-hard pasta. It must mature for at least 120 days but can mature up to a year.
It is recognized for the cylindrical shape and for the DOP brand, executed on fire, on the scalzo. It has a thin crust of yellow color, uniform, smooth, compact.
The pale straw yellow paste, has some irregular and well distributed eyewear. The smell is well perceived delicate, of dried fruit and hay.
