The name is already a clear reference to the ancient peasant tradition. In fact, our aim is to continue the work undertaken for many years, always dedicating particular attention to the quality of the products, helping to rediscover the lovers of sheep cheese the simple tastes of once. We therefore considered it important to recreate the preconditions of the processing that our ancestors carried out with rudimentary tools, using fresh milk just milk of their small breeding. The “primitive” therefore differs from the other products transformed precisely for the characteristic of the processing to LATTE CRUDO, as happened SECOLI FA, when still did not exist, even in the most remote thought, “THE PASTORICATION” of milk. This peculiarity leads even more to a milk which, at the time of transformation, presents the absolute genuineness, so as to be able to guarantee the consumer the integrity of a taste that only thus is allowed to preserve.
